SALMA loin comes in two varieties, back loin and belly loin. Belly Loin has slightly more fat than back loin, and is therefore extremely suitable for heat treatment as frying, baking in the oven or barbecue. Back Loin makes it easy to cut fine slices of sashimi and sushi. Back loin weights from 300 g to 550 g, and belly loin weights from 700 g to 1150 g.
